Menu Plan Monday!!!
Hey! It seems like the only thing I post anymore is MPM! I'll have to work on that this week. :) I am officially done watching the 2 little girls I had for about a month. They're mom decided to stay at home again and it was just a really big challenge for me. So, we're back to just Jack & me during the day! Hopefully that will free up more time for me to do other things during the day - like blog. You know - the important things.
Monday - White Cheese Pizza (see recipe below)
Tuesday - Potato Soup (still have to find a recipe...but, we got some potatoes at the farmer's market this weekend and I want to use them up!)
Wednesday - Falafels with Hummus and Tzaziki Dip (everything homemade!)
Thursday - Spaghetti with garlic french bread
Friday - Grilled sandwiches with soup
Saturday - Taco Salad
Sunday - I don't know!
White Cheese Pizza
1 cup of skim ricotta cheese
1/2 cup of Parmesan Cheese
2 Tablespoons fresh basil, plus additional for garnish
2 Tablespoons minced garlic
1/2 teaspoon of salt
1/2 teaspoon of pepper
Pillsbury Refrigerated pizza dough (I am using homemade, though)
1 cup or more of sharp cheddar cheese
1 cup or more of mozzarella cheese
1 cup of diced tomato
Preheat oven to 450*. In a bowl, combine ricotta, Parmesan cheese, basil, garlic, salt and pepper. Place crust on cookie sheet and top evenly with cheese mixture. Sprinkle with remaining cheese; bake until golden (about 10-12) minutes. Sprinkle with tomatoes and chopped basil.

Fall Fashion Tips from the Renaissance Festival
Last week, we took a family trip to the Minnesota Renaissance Festival to meet up with my dad and his wife. Normally we wouldn't go to a Renaissance Festival. It's just not our thing. But, we wanted to spend time with family and enjoy the warm weather before it went away. It was fascinating. I noticed a lot of new fall trends and thought I would share them with you all.
Wings are in. They show your angelic side. Unless, of course, your wings are black. Then they show your satanic side.
Ignore the weird, blurry look on Jack's face and focus on the woman behind him. Apparently tails are in this fall. Seriously.
(Oh, and then I got reprimanded by the same woman not to take any pictures in the gallery. It was a wooden shack with swords in it.)
OMG! I think this guy noticed that I was taking his picture. Quick! Put the camera away before they realize that we're not one of them!!!
This one might be a little harder to see, but the girl on the left has a pet dragon. On a stick. You can't make this stuff up. She should really keep an eye on her dragon though...because not too far away, they're selling...

Lonnie caught this couple in the middle of their own photo shoot. It's a little hard to see, but the girlfriend (green fairy) is taking the picture of her boyfriend (half man/half some-kind-of-animal-with-horns-and-fur). Fur and horns are in. Only for men.

Monday....ALREADY???
Monday - Spaghetti with homemade french bread (rising in the oven as I type!)
Tuesday - Eating out (late birthday dinner!)
Wednesday - Big burritos (black beans, no meat) with spanish rice
Thursday - Cold Sesame Noodles with Lettuce Wraps (but using TVP instead of ground turkey)
Friday - Homemade pizza! Not sure what our toppings will be yet. :)
Saturday - Buffalo Chicken Dip in the crockpot (see recipe below!!!)
Sunday - Leftovers or sandwiches or something easy!
Buffalo Chicken Dip (serve w/ tortilla chips)
1 lb chicken, cooked and shredded
1 bottle Franks hot sauce
1 pkg cream cheese
1 bottle salad dressing: ranch or bleu cheese, you pick
Put chicken and hot sauce in crock pot. Let sit about 15 minutes. Then add other ingredients. The end.

Menu Plan Monday!!!
Lonnie is gone - again - this week, so Jack and I are having easy dinners.
Monday - Muffins, eggs and fruit
Tuesday - Quesadillas
Wednesday - Macaroni & Cheese
Thursday - Grilled cheese sandwiches and soup
Friday - Lonnie comes home!!! YAY!!! I am making this Pho Soup in the crockpot, so it will be all ready for dinner and I won't have to fuss with anything in the evening. I know my man will want a nice, home-cooked meal when he gets home! :)

We're still here!
It's been a busy week/weekend! I started watching 2 little girls during the day and my mom is here for a visit. We will have updates in a few days. So sorry for the silence around here! :)

I don't need no stinkin' flowers!
Every mom knows that when you're sick, the work doesn't magically disappear. There's still dishes to do, diapers to change, children to entertain and meals to be made. Unless you have a husband like mine. That's when the magic happens.
This past week, while I was sick, my amazing husband went grocery shopping, did dishes, picked up toys, put Jack to bed, made meals, got up with Jack, played outside with Jack, ran errands, and took great care of me. It was the most romantic thing he could've done.
I am so blessed!
